Chickpeas are a complete food, as well as one of the most versatile and useful legumes in the kitchen. They are ideal for preparing tasty first courses, delicious soups and veloutés but also as a side dish for meat and fish dishes. Furthermore, this legume is the undisputed protagonist of the classic and best-known version of hummus, a sauce based on sesame and, indeed, chickpeas.
Preparation and cooking
Prepare the chickpeas by soaking them for 12 hours and, if possible, changing the water approximately every 3 hours. Drain them and cook them in salted water for 90 minutes after boiling. Once drained they are ready to be enjoyed!
