The Sugarcane (Saccharum officinarum L.) is a tropical plant in the family Poaceae (Gramineae). Native to the Asian countries, it has spread over the centuries in Europe, Africa and South America.
By the squeezing of the juice of sugar cane, depending on the type/degree of processing and filtration, we can obtain: whole sugars, sugar in crystals and molasses. The cultivars of sugarcane can vary in relation with the soil, altitude and climate.
In particular, we would like to highlight the high-mountain varieties, that, due to their growth in impervious lands with ancient traditions, are cultivated preserving the originals methods of cultivation, rather than encouraging intensive agricultural systems.
The soil and the climate give to the sugarcane nuances of peculiar flavors and a complex of micronutrients that can strongly vary.
